Yummy Rice Pilaf

My hubby turned me onto rice pilaf years ago. I’ll admit, I am a novice at cooking rice. Seems easy, right?? I just can’t ever seem to get the timing right. Anyhow, I put this pilaf together because I wanted some rice to stuff I to some chicken burritos the other night. This is what I came up with and it was pretty yummy! This rice could be used alongside baked chicken or fish, making a super yummy side dish!

Here’s how I put it together….

Servings: 4

Cook time: 35 minutes


  • 1 C Brown Basmati Rice

  • 1 tbsp Olive Oil

  • 1 carrot, chopped

  • 1 shallot, sliced

  • 2 green onions, sliced

  • 1 jalapeño, minced; rib and seeds removed

  • the juice and zest of one lime

  • 2 C chicken stock

  • salt and pepper


  1. Heat the olive oil until it shimmers in a small sauce pan, over medium heat

  2. Add the rice and toast for a minute or so

  3. Add the veggies and cook, also about a minute

  4. Add the lime zest and juice

  5. Add the chicken stock

  6. Bring to a boil, reduce to simmer, reducing heat to low. Cover and simmer for 30-40 minutes

  7. Fluff and serve
