Roasted Summer Squash, Cabbage and Peppers


This quick and easy side dish comes together in just about 20 minutes. Roasted veggies are a staple in our household, they are so versatile and easy. Here I put together some summer squash, cabbage and peppers, top with some seasoning and olive oil and let the broiler do the work. Cabbage is such an under-utilized veggie. Aside from being insanely good for you, once roasted, it becomes caramelized and delicious. Serve these veggies alongside oven baked chicken, fish or even pasta. Let's get started:


Servings: 4

Cook time: 20 minutes


Ingredients:

  • 1 Summer squash, sliced

  • 2 Red, orange or yellow bell pepper; or 8 mini bell peppers sliced

  • 1/2 Head green cabbage, sliced

  • 1-2 tbsp olive oil

  • salt and peper

  • 1 tsp italian seasoings

Method:

  1. Preheat Broiler

  2. Place veggies, seasoning and olive oil into a medium sized bowl, stir to incorporate well

  3. Place all prepared veggies onto a sheet tray lined with parchment paper

  4. Place under the broiler for 8-10 minutes, watching carefully. Each oven works differently, so cooking times can differ

  5. Once the veggies have softened and carmelized a bit, remove from oven

  6. Serve immediately
