2 C all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 C sugar
1 tsp cinnamon
4 over-ripened bananas
the zest and juice of one orange
1/4 C honey
1/4 C olive oil
1/4 C almond milk
1 tsp vanilla extract
2 eggs, at room temperature
2 tsp poppy seeds
Sift together the dry ingredients into a large bowl
Mash the bananas in a medium sized bowl. Whisk in the honey, olive oil, almond milk, vanilla extract, eggs and poppy seeds, until well combined.
Pour the wet ingredients into the dry and fold together, until just combined.
Pour batter into prepared muffin cups to about 3/4 of the way full.
Bake for 20-25 minutes, or until a toothpick comes out clean from the center of one of the muffins.
Cool on wire rack for 15 minutes and serve!
