Leveled Up Caprese Salad

I love salads. There is just so much versatility! I usually take what I have in the fridge and come up with some kinds of creation. I’ve been making dressings and vinaigrette dressing for years. The dressing on this salad uses leftover pesto, a little balsamic vinegar, some olive oil and salt and pepper. Delicious. Here’s how I make it.


Ingredients:

  • 1 cucumber sliced

  • 1 pint of tomatoes

  • 4 mini bell peppers

  • 1 C chopped spinach

  • 5 or so basil leaves, chopped

  • 1 cup mini mozzarella balls

  • 1/2 shallot minced



Dressing:

  • 1/4 C pesto

  • 2 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • salt and pepper



Method:

  • Place all ingredients in a large bowl

  • Mix dressing ingredients and pour atop the salad

  • Allow flavors to come together, about 15 minutes

  • Enjoy!
