Bagel Decadence

Do you ever get home from a long day and have zero idea what to do for dinner?? This literally just happened to me. I got home after an amazing aerial silks class….yep, aerial silks….and had nothing planned for dinner. I took a peak inside the fridge, took inventory and came up with this bagel creation. I feel like we really get the most creative when we have to scramble. Here’s what I put together and it was pretty yummy!

Serving size: 2 bagel sandwiches

Total cook time: 20 minutes


  • 2 Everything Bagels

  • 4 slices Black Forest Ham

  • 2 slices Smoked cheddar cheese

  • 1/2 C spinach

  • mayo

  • a few dashes of hot sauce

  • 2 eggs

  • salt and pepper


  1. Preheat the broiler

  2. Toast the bagels

  3. In a sauté pan, heat up a little butter over low heat. Crack the eggs in the pan and sprinkle with salt and pepper. I use a larger sauté pan so that I can fry the eggs, move them to one side of the pan and add the ham to crisp up.

  4. Once the bagels are toasted, smear the bottom sides with some mayo

  5. Place the warmed ham on top of the Mayo. Then layer some spinach and a slice of cheese.

  6. Place under the broiler until the cheese melts

  7. Add the fried eggs on top of the cheese

  8. Add a few shakes of hot sauce to the top bun and place on top of the sandwich.

  9. Allow to sit for a moment to allow the sandwich to meld together.

  10. Slice and serve!
